I’ve been doing this gluten free thing for a little while now and I’m beginning to feel like I’m really getting the hang of things, so I thought I’d do a little ‘what I eat in a day’ post along with a video to show you all what a typical day for me consists of food-wise.
Porridge is the no.1 breakfast for me, made with gluten free oats and recently I’ve loved mixing in some chopped banana whilst it’s cooking to up my fruit intake and of course it makes it even more filling. I sprinkled a fruit and seed mix on top which had pineapple, cranberries, goji berries, coconut flakes and mixed seeds in it. Paired with a peppermint tea and a glass of water, it’s the best breakfast to start the day and calm my tummy.
On the weekend I often end up eating my lunch slightly earlier than normal and eating something brunch-y with Jordan as he likes to have a lie in. We tried out some blueberry pancakes from the Jamie Oliver Everyday Super Food cookbook (p.24) but mixed it up slightly as we didn’t have any natural or greek yoghurt.
Another Jamie Oliver recipe as we’re both big fans and the weekend is when we love to try out recipes since we have more time. This one’s a Thai Green Curry that we followed from an episode of Jamie & Jimmy’s Friday Night Feast, it’s healthy and delicious. Again we switched this up slightly, using sweet potato instead of butternut squash because we forgot to pick some up on our recent food shop, whoops! The sweet potato proved to be a great addition though, with us both giving it a big thumbs up!
Snacks & drinks
I’m not a big snacker at all and usually don’t have anything, but on this occasion I did as my lunch was rather early. A omelette cup made with spinach, pepper, eggs (duh!) and a sprinkling of cheese kept me going until dinner time.
