One for the sweet toothed of us out there, this super tasty breakfast or brunch (or even pudding if you fancy) recipe isn’t over complicated or too fancy, but it just works. I like to make it on the weekends and enjoy it with a cup of tea in my moment of calm before the day gets fully started. As with all of my recipes, mines gluten free out of necessity but you can use whatever’s available to you…
Ingredients (serves 1)
2 slices of bread (I used Tesco freefrom sliced seeded bread – a current favourite) 2 medium free range eggs 1/2 tsp cinnamon 3 plums 2 tbsps greek yoghurt 1 tbsp honey a handful of flaked almonds coconut or groundnut oil, but any oil will do (if needed for pans)
Cut up the plums into smaller chunks. Place them into a pan and cook, stirring occasionally, until softened.
Whilst the plums are cooking, crack open and whisk together the eggs and cinnamon into a bowl. Place the bread into the mixture and let it sit for a minute before repeating on the opposite side. Repeat with the 2nd piece of bread.
Using a spatula, place the bread into a frying pan (add a small amount of oil if your pans need some help in the non-stick department – mine didn’t) and cook on a medium heat for 2 minutes or until golden brown on each side. I like to press down on my french toast whilst it’s cooking in the frying pan to speed things up a little.
Once both pieces of french toast and looking golden, put them onto a plate and top with the yoghurt, plums, flaked almonds and honey. Enjoy immediately!
